Daugther #2 is a good cook, she and I have similar tastes. The only problem is that she's away at school now, but fortunately not too far and can come home and give me a cooking lesson every so often. This is one of my favorite meals. I think it's an amalgamation of a few different recipes off of pintrest.
She also is a very good photographer, so not only did she make dinner but also took some pictures for my blog.
Vegetables(thinly sliced zuchinni, squash, pepper, shallots, and asparagus) sliced and drizzled with olive oil, kosher salt and ground pepper laid out on a circle of parchament paper
Next goes the filet of fish, we used Tilapia this time, followed by lemon slices.
Fold the paper over, crease the edges and twist the end to make it airtight.
Then we bake it for 25 minutes at 350.
Ready to eat!!

That looks tasty. We do something similar, but we have a silicone container which we bought. Pile everything in, close it up, pop it in the oven and Bob's your uncle, supper in half an hour.
Wonderful fish parcels! We sometimes make fish parcels in tin foil (oil brushed on so it doesn't stick) for a BBQ.

I love fish prepared in parchment. Always moist. Wonderful ingredients your daughter used and tasty photos too!
Souns wonderful, but the only problem is DH can't eat fish. :-(
My husband is on weight watchers, and I should be too. this looks like something I'd like to try.
